Tasting Notes:

Pale straw with a green edge. Lime, orange and some freshly cut granny smith apple engulf the senses. Wonderfully ripe floral and tropical notes frame the lime, orange and apple fruit flavours. A saline and mineral aspect provide some additional complexity whilst just the perfect amount of natural fruit acid rounds everything and gives the perfect amount of length.

Technical:

Fruit was picked, then chilled and whole bunch pressed. Racked to stainless steel fermenters to undergo a natural fermentation. Temperatures were key in this process and the ferment was stopped with some residual sugar to ensure balance between sweetness and acidity was achieved. We lightly fined then filtered the wine prior to bottling.
